Chewy Double Chocolate Cookies

What You Need:
  • 1 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup raw sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon coffee (optional)
  • 1/2 cup chocolate chips 
Instructions:
  • Preheat oven to 180 degrees C. 
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together butter, sugar, egg, vanilla extract, and coffee until smooth.
  • Gradually add the dry ingredients until well combined. Make sure not to over mix.
  • Fold in the chocolate chips.
  • Scoop 1 tablespoon of cookie dough and roll into balls. Place on a baking sheet and bake for about 9 minutes.
  • Cool for a couple of minutes before serving.
