Steamed Coffee Cupcakes

What You Need:
  • 1 cup all purpose flour
  • 1/4 cup + 7 teaspoons granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 3 teaspoon coffee powder
  • 1 cup fresh milk
  • Place all the dry ingredients in a mixing bowl and mix them well.
  • Add milk and then continue mixing until well blended.
  • Grease moulds with butter and then pour the mixture into the moulds. 
  • Steam the cupcakes for about 20-23 minutes. You may check whether or not the cupcake is done by inserting a toothpick or a wooden skewer in the centre. The toothpick should come out clean. If it isn't done yet, steam again for another 5 minutes.
  • Take the cakes out of the steamer and let them cool for about 10 minutes.
  • Serve with homemade mint tea with lemon.
This recipe makes a batch of 12 small regular cupcakes.
