Steamed Banana Cupcakes

What You Need:
  • 2/3 cup all purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons water
  • 1 teaspoon extra virgin olive oil
  • 1 egg
  • 1 ripe banana, mashed
  • Place all the dry ingredients in a mixing bowl and mix them well.
  • Add water, oil, egg, and mashed banana and then continue mixing until well blended.
  • Grease moulds with butter and then pour the mixture into the moulds. 
  • Steam the cupcakes for about 15-18 minutes. You may check whether or not the cake is done by inserting a toothpick or a wooden skewer in the centre. The toothpick should come out clean. If it isn't done yet, steam again for another 5 minutes.
  • Take the cakes out of the steamer and let them cool for about 10 minutes.
  • Serve with iced coffee or iced tea.

This recipe makes a batch of 6 small regular cupcakes.
