Chicken Adobo Fried Rice

What You Need:
  • 1 cup cooked rice
  • 1/2 kg chicken breast, cut into cubes
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1 teaspoon lemon
  • 1 medium sized onion, chopped finely
  • 5 cloves garlic, chopped finely
  • 1 small carrot, chopped finely
  • 1 tablespoon finely chopped red bell pepper
  • 1 tablespoon finely chopped English parsley
  • Salt 
  • pepper
  • Butter
Instructions:
  • In a small container, combine soy sauce, vinegar, lemon, and a pinch of salt and pepper. Add chicken and marinate for 30 minutes. Set aside
  • Heat butter in a pan over low heat. Saute onion and garlic and then add rice. Stir-fry for about 5-7 minutes. Set aside.
  • Heat butter in a separate pan over low heat. When the butter is hot, stir-fry marinated chicken for about 6-9 minutes or until golden brown.
  • Add stir-fried rice and then season with salt and pepper. Pour the marinade and continue cooking for about 3-5 minutes. 
  • Add carrots, red bell pepper and English parley. Cook for another 1 minute.
  • Serve hot.
