Chicken Schnitzel with Chilli Mayonnaise Dip

What You Need:
  • 2 medium chicken breasts
  • 1 ½ tablespoon rice flour
  • 2 eggs, beaten
  • Homemade bread crumbs
  • 1 tablespoon grated parmesan cheese
  • Salt
  • Pepper
  • Paprika powder
  • ½ cup extra virgin olive oil
  • Cut chicken breasts into half crosswise.
  • Combine rice flour, a pinch of salt, pepper and paprika powder on a plate.
  • On a separate plate, combine bread crumbs and parmesan cheese.
  • Coat one piece of chicken with flour and shake off the excess. Dip chicken in beaten egg and then coat with bread crumb mixture. Repeat the process until all the chicken is coated.
  • Heat oil in a pan over low-medium heat. Cook the chicken for about 2-4 minutes per side or until golden brown.
  • Transfer to a paper towel-lined plate to drain the excess oil.
  • Serve with chilli mayonnaise diproasted potatoes, and matcha latte.
