Chicken, Ham, and Cheese Roll-Ups

What You Need
  • 4 skinless boneless chicken breast, pounded thinly
  • 4 slices cooked ham
  • 4 slices cheddar cheese
  • 2 tablespoons flour
  • 1 egg, beaten
  • 1 tablespoon milk
  • 4 tablespoons bread crumbs
  • Salt
  • Pepper
  • Toothpicks
  • Extra virgin olive oil

Instructions
  • In a bowl, mix egg and milk well. Set aside.
  • Season chicken breasts with salt and pepper.
  • In a large plate, place a slice of ham and a slice of cheese on a piece of chicken breast. Roll up tightly and secure with a toothpick.
  • Coat the roll with flour and shake the excess off. Dip in the egg milk mixture, and then coat with bread crumbs.
  • Repeat with the remaining chicken.
  • Heat oil in a pan over low-medium heat. Cook the chicken for about 3-5 minutes per side or until golden brown.
  • Transfer to a paper towel-lined plate to drain excess oil.
  • Serve with chilli mayonnaise dip, roasted potatoes, and homemade iced coffee.
