Roasted Potatoes with Herbs (Without an Oven)

 What you need:

  •             5 washed potatoes
  •             2 cups cold filtered water
  •             1 teaspoon extra virgin olive oil
  •             1 teaspoon unsalted butter
  •             A pinch of salt, pepper and paprika powder
  •             A pinch of oregano, basil, and tomato spice blend
           
Instructions:

  • Scrub the potatoes with a clean brush to remove any dirt, and then rinse.
  • Place the potatoes in a pot and cover with cold water.
  • Bring the water to boil. Once boiling, reduce the heat to simmer. Do not cover. Cook for 6 minutes, drain, and then cut the potatoes into quarters.
  • In a medium skillet, heat oil and butter. When already hot, put the potatoes and then turn the heat from medium to low. Allow the potatoes to turn brown.
  • Add a pinch of salt, pepper, and paprika powder. Toss.
  • Sprinkle over a pinch of oregano, basil, and tomato spice blend.
  • Serve with tomato sauce.
